Reality

The essential oil of the big wormwood (absinthe) contains more than fourty components.

The thuyone is the main element incriminated in the toxicity of absinthe.

Moreover, absinthe also contains absinthina which is a very bitter substance.

We also find thuyone in a lot of plants as officinal salvia, some varieties of lavander,
and “achillée millefeuilles”.

 

The quantities contained by absinthe are so small that any real risk can be noticeable, other beverages also contain thuyone as vermouths, “génépi” liqueurs, and liqueurs as “Chartreuse”.

In 1981, the officials of the Food and Agriculture Organisation and the WHO met at the European Council on the subject of aromatic materials used for feeding.

They declare themselves not able to determine a daily quantity acceptable for thuyone, their recommandation is to limit the thuyone quantity contained in food products, but not to reject drinks systematically.
